Basil Pesto Recipe

Hello Sili Fam! Let’s talk quick and easy weeknight dinner recipes. My go to has to be a simple Basil Pesto Pasta. With an overload of basil already growing in the garden and the rest of the ingredients already pantry staples, this super quick basil pesto recipe is by far the most cooked and enjoyed meal in our household.
Serves 2
Ingredients:
· 40g grated parmesan (optional)
· 15g pine nuts
· ½ garlic clove (optional)
· 40g fresh basil leaves (add extra if you enjoy a strong basil flavour)
· 75g extra virgin olive oil
· Pinch of salt
Method:
Place all ingredients in a food processor, blend for 20 seconds until smooth. Serve immediately with cooked pasta of your choice or store in a jar and place in fridge until ready to use!
Use within 3 days or place in freezer and defrost when ready to use.
Tips:
To make this recipe vegan friendly, replace grated parmesan with nutritional yeast.
