'NEW' Vegan Pesto Recipe

Hey Sili Fam! 

One of my New Years Resolutions is to try and make as much as I can from scratch instead of buying packaged foods 🥒

Today I tried out a new pesto recipe and it was DELICIOUS 😋 A hit with my 1 year old too 🙌🏼

Pesto

Makes 200g

Ingredients:
 
· 4 tbsp Olive Oil
· 1/2 tsp Salt
· 2-3 tbsp Lemon Juice
· 3 tbsp Vegan Parmesan (I made a cashew parmesan but you can also use normal parmesan cheese if you want to make it non-vegan)
· 1 cup Baby Spinach
· 1 cup Basil Leaves
· 1/2 cup Raw Cashews
    
Method:
 
1. Place olive oil, salt, lemon juice, parmesan and spinach in a blender and blend until smooth.
2. Add in the basil leaves and raw cashews and pulse until you reach your desired consistency.
  
Store in one of our Sili Mini Lunch Boxes in the fridge and use within 3 days.
 
Tips: 
If you would like your pesto to be a little more runny, slowly add in more olive oil until you have reached your desired consistency.
